In 2013, “Japanese Cuisine” was registered as UNESCO Intangible Cultural Heritage. “Maetomo” is a restaurant where you can enjoy authentic Japanese cuisine and the atmosphere of Japan in Singapore. Mr Maetomo, executive chef, has been appointed as a goodwill ambassador for the spread of Japanese cuisine in 2021 by the Japanese Ministry of Agriculture, Forestry and Fisheries, and is also committed to spreading Japanese food around the world.

Mr. Maetomo says, “The most important thing is dashi (=soup broth), which is the basis of Japanese cuisine. We are fastidious about the ingredients and shave the dried bonito from Makurazaki, Kagoshima Prefecture, in the restaurant and take dashi carefully. There aren’t many restaurants that do this like we do.

Other ingredients are also imported from Toyosu (Tokyo) & Osaka Central Wholesale Market every week, and we take care of the logistics of the ingredients ourselves so that we can offer compelling dishes.

I have been working with Hoshizaki for over 20 years. I have talked to other suppliers, but I feel that Hoshizaki is the most reliable partner. The equipment doesn’t break easily, and you have a sense of security when you use it. If there’s a problem, they respond immediately, so I want to have a good relationship in the future.”
